The life of a Papin-Jacob oyster: The juveniles are removed from the sensors when they are 8 months old. They are then screened in order to select the flower and send them to their appellations (special, clear, fine, etc.).
They will stay 18 months in the Marennes Oléron basin. It will then be screened again, worked, selected. Some will go to other basins to find new food (marine plankton) in order to make the flesh more complex and pearl the shell. They will then return again to Marennes Oléron for maturing.
Valérie and Emmanuel must therefore be breeders, purifiers and shippers at the same time…
Sale at the property:
– Tuesday to Friday from 9:00 a.m. to 18:00 p.m.

– Direct sale of live oysters and shellfish – cooked at home in sea water. Tastings on site with local wine.
