What do you like about your job?
I like working the soil more and more, returning to a more respectful, more natural agriculture, that's the choice I made when I took over; but be careful: while retaining the spirit and soul of our house which has real know-how, a real tradition. It is both exciting and rewarding. You know, we are one of the oldest families living in the town. The attachment to property is visceral!

Is it a quest for requirements?
Yes and on several levels, firstly that of continuing to write history while adding my personal touch, then the desire to vinify and distill to make quality products. This is what guests who come to the property expect: they want authenticity and tradition. The cellar/shop is adjacent to the winery, so you can see everything that happens there, the customers love it!

From the harvest to the production of pineau and cognac, from double distillation to aging in oak barrels and barrels: in short, "from the vine to the bottle".
